BORLOTTI BEANS WITH OLIVE OIL

 

COLD DISH/SERVES 4

 

Ingredients:

 

500 gr borlotti beans (without the shell)

3 ripe tomatoes

2 onions

2 garlic cloves

1 carrot

1 green pepper (banana pepper)

1 stick of celery

6-7 tbsp olive oil

2-3 tbsp granulated sugar

1 tsp salt (a little bit more)

Bay leaf

Parsley

 

Directions:

 

1. In a large pot, boil borlotti beans for 45 min. then pour out the water.

 

2. Put olive oil in a large saucepan then add grated onion and stir them for 5 minutes (until the onion is tender). Put in grated carrot then continue to stir them for almost 10 minutes over a low heat (until the carrot is tender). Add crushed garlic cloves and chopped celery and continue stirring. Put minced tomatoes and stir well (until the tomato is tender).

 

3. Add minced green pepper (until the green pepper is tender). Add borlotti beans, sugar and salt. Mix them well, reduce heat and let it simmer for 10 minutes. Finally, add hot water and a bay leaf. Bring to a boil and then immediately reduce heat, and simmer for at least 1 hour (until the borlotti beans are tender). Turn off the heat; let it sit for 30 min. When the dish becomes lukewarm, you can serve. Put it into a bowl and add some more olive oil and chopped parsley on top of it.
